Having helped Saison achieve two Michelin stars, led the kitchens of La Urbana and Oaxaca’s El Destilado, traveled all the states of Mexico researching his heritage, and creating his global popup series Viento, Chef Aguilera now presents THE TASTING ROOM @ copas as a culmination of his experiences, with the goal of allowing more people to discover these unique flavors and stories without the usual tasting menu price tag.
