We founded Copas because of our passion for hospitality and bringing people together. After nurturing and developing the initial concept throughout 2022, we are thrilled to evolve Copas into the California Mexican neighborhood eatery it is today. Chef Julio’s years in the Michelin starred kitchen of Saison and around San Francisco helped build the foundation that allow his travel and tasting across Mexico to shine. Jessica was brought up in her family’s Mexican restaurants and now as Chief of Staff for Saison Hospitality, she brings an uncanny commitment to excellence… and multi-tasking. Creativity is at the heart of what we do and we are dedicated to joining forces with our communities – the dynamic, vibrant energy of the Castro, artists and artisans throughout the bay and Mexico, and local Chefs and mixologists.
We are also constantly striving to ensure our restaurant, and the restaurant industry as a whole, can provide both an equitable, positive working environment for our team and a genuine hospitality experience for the guest.
